Lee trained under Christina Martin and ran Flavour Cafe in Pietermaritzburg for twelve years. People still bring up those burgers.
Hilton is where he cooks now. Rostis with poached eggs, gochujang hollandaise, a sushi roll built like a hot dog. About half the menu is vegan or gluten free and none of it tastes like a compromise.

The food
The menu moves with what is good that week. These are the ones that stay on it.
Rosti, poached eggs, gochujang hollandaise. On until we close.
A sushi roll built like a hot dog. Ours, and nobody else makes it.
Berry base, coconut, chia, whatever fruit is good that morning.
Rice, pickles, greens, and a sauce that does the work. Cut that morning.
Three crispy fried tacos in our yoh! sauce. Tofu, chicken, or salmon and tuna.
Coffee, fresh juice, smoothies. Oat, almond and soy on the shelf.
Baked here
Chocolate cake, baked cheesecake, Bounty bars. The cheesecake and the bars are gluten free. Whatever is in the cabinet is what came out of the oven that morning, and it goes.

Seating inside and out, a jungle gym on the grass, and a decor corner on the way out. We are not licensed, so no alcohol.
